Sauerkraut is a traditional product on the market in Serbia and the region, and ours is made from the Futog’s autochthonous cabbage variety. Sauerkraut is cabbage that has been biofermented and as such can be stored in a ready-to-eat form for a longer period than in its fresh state. It has always been the backbone of winter storage in every household in these areas and was produced in almost every house in Novi Sad and Vojvodina, but also throughout Serbia. The technological process of biofermented (sour) cabbage production takes place with the application of the most modern processes and quality standards. We are very proud of the fact that our sauerkraut is sold in large retail chains, through wholesalers, but also in our farm, at producer prices. Wanting to meet your requirements both in terms of quality and safety of our products, we entered the process of implementing the requirements of the FSSC ISO 22 000 standard. Our work and effort was crowned by receiving the certificate on December 26, 2012.

In order to ensure, in addition to the taste, the completely traditional appearance of our most popular product, we decided to offer sauerkraut in heads to the market of Serbia and Europe. Keeping the cabbage in the shape of a head gives it a natural look even after fermentation, and a whole head of cabbage gives your table a completely ethnic look. Raso
Just like sauerkraut, Raso contains microorganisms that suppress the processes of rotting in the intestines, promote the removal of waste materials from the body. It also stimulates the exchange of substances in the cells and has a beneficial effect on the intestinal mucosa. The use of brine promotes excretion and better functioning of the bile and pancreas, it is perhaps best known as a proven good hangover remedy.
Marinated vegetables
The second group of products in terms of representation in our product range is marinated vegetables packed in different types of packages accepted on the market. Marinated vegetables represent the appropriate acidification of previously prepared types of vegetables, which is actually a dictated lowering of the pH value of the environment. Acidification is the most effective way of suppressing the activity of most of the microorganisms that cause spoilage. The full activity of the present microorganisms, which cause spoilage, takes place in a neutral and weakly alkaline environment. Organic acids are used for acidifying vegetables, most often acetic, but also others, such as lactic, citric, tartaric and malic. In addition to lowering the pH value, these acids have another function of improving the taste of the final products. Marinated products in their final form contain 3-6% acid, most often acetic acid. Two types of vinegar are added: alcoholic or wine vinegar and acetic acid (essence) obtained by dry distillation of wood. In these products, the preservative effect of acetic acid is supported by added table salt. Each marinated product also contains seasoning according to the manufacturer’s declarations. Therefore, in addition to sauerkraut, the Ćulum family successfully markets on Novi Sad markets significant quantities of other pickled vegetables in bulk form and packaged, produced under domestic production conditions. These vegetables are available for sale both through wholesalers and retailers, as well as directly from our farm.
